Happy Birthday "Margie" Cupcakes

One of my guilty pleasures of as late is stumbleupon.com.  It's an evil time-sucking website that allows you to identify some "favorites", let's say, CUPCAKES, and it will randomly generate websites that match your preferred categories.

So, when it's late at night and I'm trying to wind down, I have been known to stumble through a fair number of cupcake (and other) websites.  (It's no worse than playing spider solitaire, right?)

In the process, I've accumulated a few cupcake recipes that I've wanted to try out.  And so, with no cupcake/cake orders this week, I decided to do some R&D (that's research and development) with a rare quiet day at home.

It also happens to be my BFF's Birthday.  Margie is my good buddy who often gets roped into my insanity (she even helped me jack-hammer the tile out of my kitchen so I could lay down a wood floor).  We often get mistaken for one another, and for being sisters which is a compliment to me -- she tolerates it with her usual graciousness.  She's been involved in more than one of my frosting fiascos -- usually on the end of cleaning up after me and my mess.  I call her my side-kick, and she takes that in her usual good-natured stride.

While "stumbling" through random websites, I had picked out a few recipes, (two in particular) that had caught my eye:  Spiced Chocolate cupcakes with Clementine Cream Cheese Frosting, and Lime Cupcakes (see also below), and had planned to make them for Margie for her birthday.  But I also happen to know that Margie has a thing for "Heath" bars, so instead of being totally self-indulgent, I thought I ought to at least make cupcakes in a flavor she actually likes.

I came across the recipe at and modified it just a little. I substituted hot water for the coffee.  I don't drink coffee, and spent a summer working in a greasy truckstop coffee shop so I also don't care for the smell of it either.  Other than that, and perhaps a little less frosting than the original, I stuck to the recipe on this one).

Look at how these bad boys are assembled.

In the beginning... just a chocolate cupcake...

dipped in dark chocolate ganache and rolled in crumbled toffee bits...


and topped with MORE caramel frosting.
They were yummy - and the birthday girl approved, so it's a keeper.

Here's cupcake #2: Spiced cupcake with clementine cream cheese frosting.


This one tasted like gingerbread.  Very spicy, almost bitter, but the orange frosting was a nice foil.

Lime cupcakes with Lime whipped cream frosting.  I never did find "lime extract" - I'm sure my mom has some - but since she's 1200 miles away, I opted for some sugarfree Lime gelatin for flavor.  You can find it at:

All in all, a pretty good cupcake day.  Stop by anytime for what we call "factory seconds" -- lots and lots of cupcakes hanging around = WAAAAY too much sugar calling my name.

40th Anniversary RV cake

Death by Chocolate cake topped with an RV and pink flamingos.
Rv is crispie cereal treats, the flamingos are fondant.
If I'd have had 10 more minutes on this one, I would have re-done the banner - it looks a little blobbish to me, as in, what's that strange white blob on the side of that RV?  Maybe the flamingos should have held the banner.  Maybe.  Maybe next time...
Oh well, bake cake and learn.


R2D2 cake and Jabba the Hut Cupcake toppers

You would think that making a Jabba the Hut topper would be pretty easy.  After all, he pretty much looks like a blob of frosting.  But it was a little more daunting than than first perceived.  



R2D2 cake - body is cake, top and legs are crispie cereal treats.  R2D2 ended up a little short in the body - if I had it to do over again I'd add one more layer on the cake,  but his compactness made the 60 mile trip to the party a little less harrowing.

50th Birthday Baseball Cake

Death by chocolate cake, decorated to look like home plate on a baseball field.  The chain link fence is paper mounted on foam board. The sand is graham cracker crumbs.  Everything else is fondant.

Cupcakes are EVIL

I was going to be good this week - lay off the sweets a little (let's just say things were getting out of hand).  So I made plans to eat better - maybe walk the dog with a little more zeal.

And then the cupcakes happened.

Made these for a 50th birthday party - the toppers are mini sugar cookies.  Of course there was extra frosting left in the bag - and of course I had some ugly cupcakes (the rejects) within arm's reach.  I thought, "I'd better try these and make sure they taste OK, before I send them off to the party."

Just one bite.

...and before I knew it, I had slammed 2 (!) WHOLE cupcakes.  Taste test completed.  Cupcakes passed.  My diet?  epic fail.

ARGH! Pirate Birthday Cake and Cupcakes


A Pirate Ship Cake and skull/crossbones cupcakes for a 4-yr. old who LOVES pirates.  Cake is covered in candy bars, the cannon balls are gumballs, the cannons are made of cookies, the treasure chest is rice crispie treats covered in modeling chocolate, and the pirate and his parrot are made out of fondant.

Happy 1st Birthday, Little Blue Truck Cake

It all started with a storybook:  The Little Blue Truck, by Alice Schertle (Harcourt Children's Book, 2008, Jill McElmurry, illus.) --to be exact.  


Loved and read over, and over, and OVER, K's mom just had to have a replica for his first birthday cake.  So, the little blue truck became a little blue concoction of crispie treats, white chocolate and fondant.









That grin says it all!










K's mom made the "mud" cake (LOVE the candy rocks! -- nice touch!) and placed the truck topper on top.

Happy Birthday K!  Maybe someday you'll remember me as your FAVORITE Aunt! 

Ryan's Lions

For his eagle scout project, my nephew started an NPO to donate stuffed lions for people in circumstances
that require a little extra "courage".  

He began making his own lions, and as their popularity blossomed, he commissioned an order of Ryan's Lions from a company in China who built them to match his prototype, and has given away nearly all of them.
My sister (as well as others) have organized fundraisers so more lions can be ordered.  I happened to be in town for the bake sale and made some Ryan's Lions toppers for the event.

Happy "Not Your Birthday" Pokemon Monopoly Cake

Martin turned 18 today, but he didn't want a party, didn't want a cake, didn't want presents. (OK, maybe he wanted presents).  Guess he's just too old for that stuff these days.  So mom planned a party to celebrate the 18th anniversary of her labor day labor.

Martin got into the spirit of things and would probably say it was a great day after all.

He and his buddies (fondant replicas of his friends are holding the "this is not your birthday cake" sign) and he like to play games - usually Poker, XBox 360, among others.  One favorite is "Pokemon" Monopoly.  So a Pokemon Monopoly Not Your Birthday cake it was.  All figures are made of fondant, and this project really made me wish I'd invested in a food printer so I could have made it really realistic.  Maybe for the next time Martin doesn't have a birthday!

Baby Einstein Cake for 1 yr. old Brie!

One of the fun side effects of doing cakes, is dipping a toe back into a world I used to live in. My kids are well beyond the Baby/Little Einsteins and the Disney Channel.  I never saw this day coming - there were days when I thought we'd be living in the Barney/Rugrats world forever.  More and more there are a whole new crop of kids shows and characters that I don't recognize.  Who knew I'd get so old?  It's fun to be able to peek in without having to actually watch the shows over and over and over like we did when my kids were little.

Brie's mom sent me a picture of the plates (featuring several characters from the Baby Einsteins show) she was using for the party.  I placed fondant replicas of these characters around the bottom layer of the cake.  The top of the cake featured gumpaste flowers, a crispie treat bumble bee and a caterpiller made out of gumballs.

Happy 1st Birthday, Brie.  I wonder what kids shows will be in vogue when you're as old as me!
