S'mores Cakeball tutorial

Craving a little S'mores goodness?  This is one of my recent cake ball creations - a S'mores cakeball.  While they were yummy when they were all set up, if you want a little of the melty magic that happens with S'mores, I would recommend placing your cakeball in the microwave for 5-10 seconds to make the chocolate soft and creamy.  You may have to give up with eating it off the stick at this point, but isn't melted chocolate worth it?

To make the S'mores cakeballs:  Start with a ball of chocolate cakeball mix (crumble a chocolate cake and mix with 2-3 TBSP. of fudge frosting.  The mix should have the consistency of a firm cookie dough).

Place the cakeball between 2 layers of waxed paper and press it flat with a cup.

Place a small marshmallow (I made my own) in the center of the pressed dough and then fold the dough over and pinch off any excess cakeball dough.  Roll into a ball.

Note:  if found this step to be much easier if the marshmallows were cold and the cakeball dough was room temperature.  Place the marshmallows in the fridge or freezer for 10-15 minutes to firm it up.

Melt a little chocolate, dip the ends of the sticks into the chocolate and then press the stick into the cake ball.

Dip the cakeball in melted chocolate  (make sure your cakeball isn't really cold and your chocolate really hot, or they may crack).

Then immediately roll the cakeball in crushed graham cracker crumbs.

enjoy!
